Twenty months later"¦
Viggo is standing facing a canvas with bright colors and he is rubbing the back of his neck. I really need to finish this piece. He thinks to himself as he picks up his camera.
"Viggo"¦you are needed in the kitchen." Ian called.
Viggo leaves the canvas and walkto ato a room full of people. His small kitchen packed with friends and family. His parents are there along with Orlando and Sean with their arms around each other leaned against the counter. All of the fellowship was there including Peter and Fran and their children. Sean had his girls with him who were sitting around the table smiling and giggling over some shared joke along with Sean Astin and Christine's daughter. Henry was sitting at the head of the table with a small red headed baby in his lap with big blue green eyes.
The baby smiled and giggled when she saw Viggo walk in.
"Oh she lights up so when her Daddy walks in the room." Tabby says as she sat a rather large cake with a big candle shaped like the number one in the center of the table.
"Her mother does much the same thing." Aunt Maggie says smiling widely.
Viggo smiles and puts his arm around his wife as he leans down and kisses Katie on top of her soft bright curls.
Ian lights the candle with a flourish and John says that they can't do this without singing Happy Birthday. Elijah seconds John's suggestion and then everyone, family and friends including hobbits, elves, and humans in the too small kitchen begin singing Happy Birthday to a very wiggly little one-year-old girl. Henry just laughs as his half sister giggles and wiggles in his lap trying desperately to reach the pretty cake everyone else seems to be ignoring for a song.

Anyway here is the recipe for Rødgrød med fløde and Chocolate Irish Wiskey Cake.
Rødgrød med fløde (thickened red fruit soup with cream)
Preparation: 20 minutes
Cooking: 10 minutes
Ingredients (serves 4)
27 oz. (3/4 kg) berries in the proportions 40% raspberries, 40% currants, and 20% black currants (alt. use natural, unsweetened juice in the same proportions and then skip the first 3 steps below)
1 pint (1/2 l) water
0.4-0.8 cups (1-2 dl) sugar
4-5 tablespoons (60-75 ml) cornstarch per 4 cups (1 l) juice
1-2 oz. (25-50 g) blanched, chopped almonds
cream (optional)
Directions
Rinse the berries.
Boil the berries in water for 4-5 minutes in a pot.
Mash the berries in order to extract as much juice as possible.
Measure the amount of extracted juice and add sugar according to taste.
Pour the juice back in the pot and bring to a boil.
Mix cornstarch with a bit of water, and stir the mixture in the juice.
Boil the fruit soup for 1 minute.
Optional: Serve with cream on top. (In the story they put the berry sauce on a deep plate and set a slice of Chocolate Irish Whiskey Cake on top and cream over that.)
Alternative suggestion: Add the raspberries to the juice extracted from the other berries in order to get some more substance in the fruit soup.
Irish Whiskey Cake
1 c. chopped nuts, divided (optional)
1 chocolate cake mix (in the story she made a homemade cake no mix but this is MUCH easier)
1 small pkg. instant chocolate pudding mix (can also use melted chocolate bars if doing it the old fashioned way)
4 eggs
1/2 c. oil
1/2 c. milk
1/2 c. Irish Whiskey
Grease and flour bundt or tube pan. Sprinkle 3/4 c. nuts over bottom ofparepared pan.
Combine remaining ingredients and remaining 1/4 c. nuts. Mix well and pour in pan. Bake at 350 degrees for 40-45 minutes.
While cake is still in pan and still hot, prick holes with toothpick or skewer, and pour half the glaze over cake. Let stand 30 minutes. Invert onto plate. Prick holes on top and pour on remaining glaze.
Glaze: Melt butter in saucepan. Add water and sugar. Boil 5 minutes, stirring constantly. Remove from heat and stir in whiskey.
